INGREDIENTS
- 4 boneless skinless chicken breasts
- 8 slices prosciutto
- 1 whole avocado
- salt
- pepper
- EVOO (Extra Virgin Olive Oil)
- seasoning of your choice
- butcher twine
DIRECTIONS
Rinse the chicken breasts under cold water, then pat dry with paper towels. Place the chicken flat onto a cutting board. Using a sharp knife, butterfly the chicken breast long ways. Place your free hand flat on top of the breast as you butterfly. Keep it in one piece.
Season the inside of the breast with salt & pepper. Lay a slice of prosciutto on each side of the open chicken breast. Half the avocado and remove the pit. Slice it into thin slices.
Place the sliced avocado on top of the prosciutto. A chicken breast has a smooth, pretty side and a gnarled, jagged side. Starting from the jagged end of your chicken breast, slowly roll it. (this will ensure your presentation will look good) Run a single piece of butcher twine around the roll-up and tie off. The twine does not have to be super tight. Just enough to hold it together.
Brush the outside of the chicken breasts with a little bit of EVOO and season to taste.

Direct Grill until an internal temp of at least 165F is achieved.
