Seared Ahi Tuna Steaks

INGREDIENTS
  • good quality ahi tuna steaks
  • kosher salt
  • fresh ground black pepper
  • canola oil
  • 2 cloves garlic minced
  • juice of 2 lemons
  • pinch of fresh parsley

BIG GREEN EGG SETUP
 
         Set up the Big Green Egg for direct grilling. Cooking temp will be 400F. Place a cast iron skillet on the grill grate so it can preheat as the Egg comes up to temp. Cast iron should always preheat for approx 20 minutes. 


DIRECTIONS

Rinse the steaks under cold water and pat dry with paper towels. Brush on a small amount of canola oil & season with salt & pepper. Refrigerate while the grill is preheating. 


As the grill is pre-heats, mix up the lemon/garlic sauce. Add the lemon juice, minced garlic, parsley, salt & pepper to a mixing bowl and combine. 

***CAUTION***
The cast iron will be HOTT!!! Use gloves, a pot holder or some type of protection when handling the skillet!


Once the grill & pan have preheated, it's time to cook! 
Add 1-1/2 to 2 tbsp on canola oil to the hot skillet. Tilt the pan to completely cover the bottom of the skillet with the oil. Slowly add the tuna steaks to the skillet. 

TIP: Tuna will cook FAST! (approx 1-1/2 minutes on each side) You can actually see it cook. Overcooking with result in dry fish. Tuna should be cooked until Medium at the most.

Cook the steak for apprx 1-1/2 minutes on the first side. Carefully, flip the steaks, top with the lemon/garlic sauce & cook for another 1-1/2 minutes or until desired.

Once the steaks have cooked as desired, remove from heat. Transfer the steaks to a plate immediately. The cast iron skillet will retain the heat and will continue cooking whatever is in the pan. 


Serve as desired and ENJOY!!
