May is National BBQ Month. And to celebrate, I picked up a brisket. At 18lbs, this is by far the largest brisket that I have ever seen or cooked. It was massive! I used Meat Church BBQ's Holy Cow BBQ Rub. I smoked this brisket at 250F and used a mixture of Oak & Hickory wood chunks. I could not believe that this massive brisket cooked completely in 10-1/2 hours. It had a great bark & flavor. Happy BBQ Month!!

How long did you rest in foil? I'm doing a 15lb'r this weekend

I only rested 1 hour bc I let it cook to 205f internal. Normally i cook to 195 and foil/cooler for 2 hours.,
