Vacation is almost over...

Vacation has been great! One last restaurant for Brunch before heading home today. It's been great to recharge and relax a bit. I've come up with a couple new recipes too and cannot wait to try them out! I'm ready to get home to my Eggs!!

How do you season and cool your scallops and what temp and how long?

Hi Steve-
I seasoned them with salt and pepper. I cooked mine in a cast iron skillet over direct heat around 400F. You want a hot pan to get the correct sear. Drizzle some EVOO and drop your scallops. The scallops will tell you when they need to be flipped because they will release from the bottom of the pan. Enjoy!
