My kids were gone Friday night so I decided to make a special meal for my wife and I. I pan seared scallops in my cast iron skillet and grilled some carrots, asparagus & yellow squash. Everything was delicious! Every Sunday, the family comes to our house for lunch. I decided to grill up some kabobs. I marinated chicken breasts with baby portobello shrooms, sweet peppers, zucchini, squash & onion in a garlic herb & wine mixture. I literally used EVERY square inch on my Medium Egg! My 4 year old little girls LOVES whey daddy cooks "state". You can never go wrong with a tri-tip!!

Looks like a very interesting site. I have a cookshack smoker and a big green egg that I'm quite a bit enjoying. In fact I'm going to publish some of my detailed methods and recipes called Meditation on the Q. I do have one question if you have the time. I read conflicting suggestions about adding old lump charcoal to new. Some suggest moving the Charco around to clear out old ash and bits the others say leave it the way it is because a good cooking structure has already been from the last fire. Do you have a suggestion here

I have had zero issues when adding new coal to old. My daily routine is to stir the old coals to knock off the ash, add new coal and light. I do suggest making sure that ALL of your ash be cleaned out before a long low & slow cook. This will improve airflow and help maintain your temp.
